It's mango season, and I've been receiving lots of them in my produce baskets. I love them! We eat them as snacks, put them in sandwiches, make desserts, or my personal favorite: mango salsa. This is one of my favorite recipes.
Ingredients:
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
1 ripe mango, peeled and diced (about 1 C fruit)
1 jalapeno, seeded and minced
1/4 C cilantro, chopped
1 tomato, diced
1/4 C cotija cheese
Mix all ingredients together. You can let it sit for an hour so the flavors soak together more or serve immediately with tortilla chips. It's soooo good.
