Whole Wheat Banana Bread

I was skeptical about this one. I really was. A whole grain banana bread? How good could that be?

As it turns out, really, really good. And somewhat healthier for you than other versions. :)

Ingredients:

2 large ripe bananas, mashed
1/4 C flaxseed (I buy mine already ground up; if yours are whole, you'll need to grind them)
3/4 C flour
3/4 C whole wheat flour
1 T baking powder
1/2 T baking soda
1/2 t salt
1/2 C maple syrup (the real stuff!)
2 large eggs
1/3 C canola oil
1/4 C brown sugar
1 t vanilla extract
1/3 C sour cream

Whisk together the flours, baking powder, baking soda, and the salt. Add in the maple syrup, eggs, sugar, oil, and vanilla extract. Add the mashed banana and sour cream and mix well to remove lumps.



Pour into a greased 9x13 pan. Bake in a 350 degree F oven for 50 minutes.


Cool in the pan. Remove and slice.


This bread would be amazing with walnuts in it, too. Maybe I'll try that next time.
